I hope everyone had a great weekend!  I had Friday off, so mine was extra long (but still never long enough, right?).  I’d like to say I was super productive with my day off, but I basically sat around playing video games, caught up on some TV, and baked a loaf of bread (recipe probably to come if I make it again and remember to take pictures.  It was delicious and crazy easy). With most of my posts, I wouldn’t know that anyone I interact with daily actually reads my recipes, but when I posted my broccoli and cheese stuffed rolls, pretty much everyone I know raved about how delicious they looked and tasted.  I had some left over dough a few weeks ago and was craving something spicy, so...

I have a thing against pre-boiling lasagna noodles.  Most prep work I don’t mind doing, especially if it will make the final product that much better.  But I’ve never really felt found a difference in lasagna texture and the cook time doesn’t change – so why bother?  It doesn’t help that the only time I actually boiled my noodles in advance, I poured boiling hot water all over my hands trying to get the noodles out.  I actually finished making the lasagna before I went to a redi-med, but needless to say, that lasagna really just wasn’t worth it. This lasagna?  Amazing.  Still not worth burning your hand over, but definitely worth the effort of oven roasting the veggies and waiting patiently while it bakes in the oven and fills...

I know I was MIA again on Monday.  I promise I’m not being flaky on purpose!  After being sick all of last week, I went to Chicago for the weekend.  I definitely wasn’t 100% ready for that adventure, but I’d agreed over a month ago to go to this Chive meet up with Josh, so away I went.  We rented someone’s apartment for the weekend so we could feel a little less like tourists and went one some tasty food adventures in our free time.  If you’re ever in Chicago, I highly recommend The Chicago Diner or The Peasantry.  The first is all vegetarian and vegan!  The second also had meaty options but had a huge selection of vegetarian options.  Plus, triple truffle fries that are crazy amazing. I know the name of this recipe sounds so weird, but hang in there, okay?  I’m clearly not the best at naming recipes and normally just use descriptive titles.  I’m just not a cutesy person.  I’m not into pink or frilly (shiny is a whole different story!) and coming up with adorable names does not come natural.  I’ll work on it, I promise.   Until then, you’re stuck with sneaky beans. This recipe has been a long time coming for me.  In middle school and high school, the cafeteria served these super delicious peanut butter bars.  They had a fudgey chocolatey top, thick and sticky peanut butter filling, and a firm slightly cookie-like bottom.  I knew I could easily recreate that fattening deliciousness if I loaded up on butter, but I...

Sorry I’ve been a little less present the last few days.  I’ve been sick with the norovirus-death-plague and have only gotten out of bed long enough to go to the doctor.  I’ll spare you the details, but I didn’t get to eat anything all day Monday and only tackled half a banana and some saltines on Tuesday.  Needless to say, I wasn’t up for typing up a delicious recipe with delicious pictures — it’s been too hard just to look at blog comments and quickly scroll by pictures of food without lingering over photos and picking out good ones. Oddly enough, my favorite part about ordering a pizza is getting a big Greek salad to go with it.  I put my salad either right next to or right on top of my pizza and let the dressing get all over.  There’s something crazy delicious about the combination of a vinegary dressing, crust, and pizza.  If you think about it, a Greek salad usually comes with a wedge or two of pita bread, so this is a pretty logical flavor progression. While I’ve been trying to figure out what exactly it is about homemade pizza that just isn’t as satisfying, I’ve never thought about my Greek salad.  Homemade dough is always better and I have control over the quality of the ingredients, so it should just be better – but...
