Woah.  Those banana bread cookies from Wednesday?  They’ve gotten more views faster than anything else I’ve posted.  Glad to know what you guys like!  If you missed that recipe, go check it out.  I’ll wait… Back now? Good.  I’ve noticed that my posts have gotten a little sweet heavy lately.  Two kinds of cookies in the last two weeks, muffins, apple pie egg rolls – do you guys even think I eat real food?  It doesn’t look like it. Sometimes, I DO forget to eat real food.  And then I discover piles of veggies in my fridge that need to be used now.  And then I find food in my pantry that I don’t remember buying.  Given all the pantry challenges I’ve seen lately, I’m definitely not alone with this...

I’ve clearly been making a lot of cookies lately.  I made my whole grain chocolate chip cookies a couple dozen times over the last two weeks plus some cookies for my mom for Mother’s day… and apparently I wasn’t done just yet.  When I got home from work and saw some extra brown bananas, I started craving banana bread pretty hard.  My loaf pan was dirty (not even sure how, I haven’t used that thing in a while!) but I already had mashed up the bananas at that point, so I decided to change course and make some extra soft, cakey cookies. Oh yes  Very cakey cookies.  These cookies are so so so soft.  Pillows of cakey goodness.  (Sorry, I think I’m a little obsessed with the texture!) Like drops...

I hope everyone had a great Mother’s Day and got to spend some quality time with their mom or their kids.  Sunday for me was brunch with my family, hanging out at the casino (one of my mom’s favorite activities!), and then an amazing dinner. I crocheted my mom a pair of socks and made her a batch of cookies from Crazy for Crust posted last week – Triple Chocolate Oreo Cookies.  These cookies are incredible!  If you’re looking for an indulgent treat or want to make someone special a great cookie, I can’t recommend this recipe enough.  On another good note, Josh put together a new About page with some pictures of us.  If you have a minute, be sure to check it out. Surprise, surprise – still not feeling well.  I’m ready to try any sort of crazy voodoo ideas anyone has, so send suggestions my way!  Started as a cold/cough kind of deal and triggered some recurring stomach issues I have.  On the bright side, feeling crummy has gotten me to include all kinds of leafy green veggies (kale, cabbage, Brussels sprouts) in my diet that I wouldn’t normally eat raw.  It also inspired these muffins. When I’m sick, I’ll go in phases of not wanting to eat anything at all to wanting to eat everything in sight.  Normal? Probably not.  I think my body just takes advantage of feeling not miserable for a minute and wants to pump as much nutrition in as possible.  And so, these muffins were born!  I...

I’m going to keep this post short and sweet, as I’m still just feeling yucky.  I’ve made this pasta a few times and for some reason it never crossed my mind to post it. If you don’t like mushrooms or asparagus (crazy people!) I think a wide variety of veggies would go great with this sauce. I’ve tried once or twice to make a quick marinara sauce, and it always fails miserably.  My most recent attempt tasted like if I made salsa with vaguely Italian seasonings – not good.  This is no marinara sauce, but it is a great sauce for coating pasta and veggies.  It’s mild and creamy, slightly cheesey.  In one word: delicious.  This is by far my current favorite way to eat pasta! Everyone has those foods that make them happy, right?  I’ve had kind of a crummy weekend.  I seem to be perpetually sick this year and as soon as the weather got warm, I started coming down with some sort of cold.  I fell asleep around 9 pm on Friday but tried to have a fun time on Saturday and Sunday.  On Saturday I went to a Red Wings game and Sunday I got my garden started, but once Sunday night hit, I was feeling like I just should never have gotten out of bed.  After eating piles of green veggies and vitamin C, I just wanted something comforting.  Not necessarily good-for-me, but a food that would make me happy. I have a suspicion that almost everyone will agree with me...
