Hope everyone had a great weekend! Mine was full of delicious, delicious foods that were not the least bit good for me.  Sorry for how long this post is about to be, but I loved everything I ate so I wanted to highlight my super favorites. (Sorry for the quality of the photos this week. We were experimenting with things and it clearly didn’t work!) I am beyond excited for the weekend!  Technically, it’s already my weekend (squeee!) but I’m excited for Saturday.  I’m headed over to Grand Rapids where there just happens to be amazing breweries and a couple vegan restaurants (both entirely vegan and omni/vegan combos).  There’s just something so great about going to a restaurant and being able to order anything I see on the menu, rather than searching for one vegetarian item. Even though it’s only like a 2 hour drive, it always seems like such a long trip.  Maybe it’s because driving across the middle of Michigan is basically just driving through 2 hours of cornfields with the occasional one stoplight...

Desperately seeking hairdresser.  I’ve lived in my current town for three years and am yet to find any sort of cosmetologist I like.  If you add that to the four years I spent in university, you’ll soon realize that my hair has been a hot mess for the last 7 years.  I had a friend who went to a fancy pants cosmetology school and through college she would give me fantastic hair cuts and tints when I happened to see her, which would hold me over through the bad haircuts in between.  Unfortunately (for more reasons than just my hair) said friend now lives a handful of hours away with her husband and baby, and that can only mean no time for road trips just because I’m having a bad...

Challenging myself and Josh with a gluten free week has been pretty amazing. I haven’t had any revolutionary health improvements, but I knew I wouldn’t because I’ve had gluten sensitivity tests, including a pretty conclusive stomach biopsy. The major benefit of gluten free week is it’s forcing me to cross off a bunch of foods from my blogger bucket list. The item at the tippy-top of the list? Cauliflower crust pizza. I’m sure everyone has seen this recipe everywhere already. It’s all over Pinterest and I know a lot of bloggers that have posted about it. But how could I not? Friday! Friday! Friday! I don’t know about anyone else, but I am just so drained lately.  I really miss being in school and getting the whole summer off and a solid two weeks++ for Christmas and New Years.  I keep day dreaming about a billion different vacations I want to take at the end of the year but am having trouble committing to anything.  Vegas? Mexico?  Or just laying around my house for a week?  All sound so good and I’m jealous of my future self! True story, I have no idea what a real meatball tastes like.  I’m not certain I’ve ever eaten a real meatball even before quitting meat at age 11.  All I know is meatless meatballs are where it’s at.  These have been a staple at family gatherings my entire life.  Granted, the family recipe is fried and doesn’t use  mushrooms or flax eggs, but I find this healthier version to be just as comforting.  Bonus points because baking = a million times easier than frying and your house doesn’t smell like oil for weeks.
