It’s a miracle! A recipe that isn’t a baked good or a pancake or in some other way floury and sweet. I’m not normally big on spicy food, but cold weather is spicy food weather, right? Soup and spicy are my wintertime jams. You know what else is my jam? Mexican food. I’ve been kicking myself for over a week after discovering how easy it is to make my own enchilada sauce, because I’ve probably purchased 10,000 mediocre cans of sauce in my life time. Not only is this WAY better, I can control exactly how spicy it is and a can of tomato sauce (the base for this) for some reason costs less than half than a can of enchilada sauce. Win! Plus, it comes together in about as...
We’re entering the season where I stop making “real” food and do nothing but bake for two months. That might sound like an exaggeration, but it’s pretty much not. If it’s cold outside, I want something warm, fluffy and comforting – the only exception might be spicy food, how can THAT not make you warm! When I posted the apple braid last week, I heard several comments about how great it would be with Thanksgiving. I thought it was a little funny, because I had actually made this pumpkin braid first and thought the whole time about how I’d want this for Thanksgiving breakfast. Make it ahead and it’s ready for nomming while you’re mashing, whisking, and basting. The pumpkin mixture is very lightly sweetened. Normally, a braid like this...
I am T minus 5 days from my Florida/Caribbean cruise vacation, and let me tell you I need it. In addition to the broken garage door fiasco from the other week, I also have crazy water damage in my bathroom. I’ve mostly been taking that as a cue to not shower for as long as possible on the weekends and lounge around in my pajamas, eating pancakes. Pancakes are one of my ultimate favorite foods. Oh, you like pancakes too? Here, go look at all these other delightful pancakes. I’m definitely a feelings eater, and you’re sure to find a pancake recipe here feeling-eating-worthy. These apple butter pancakes will fix whatever fall-time woes are ailing you. This is the first pancake recipe I’ve made in a LONG time that doesn’t...
Hey everyone! Look at me, posting on a Sunday. I’m here feeling very honored that the lovely sisters over at Natural Sweet Recipes nominated me for the Liebster Award. If you haven’t yet, head over and check their blog out – it’s full of amazing treats like cookie dough cheesecake bars and healthy homemade Butterfingers that are all naturally sweetened and totally good for you. The stuff dreams are made of, guys. The Liebster Award involves passing on some blogger love and posing some questions to get to know your fellow bloggers better. I’m a little lazy (and frankly, all of my questions would be about cats and cookies) so rather than asking more questions, I’m just going to point you in the direction of some of the blogs I read on...
Ever go through your freezer and discover things you didn’t know you had? That’s me. Almost everyday. I make so many baked goods and dough that I’m constantly wrapping it up and throwing it in the freezer thinking I’ll eat it later. Later, I find my treasure trove and am either pleasantly surprised that dinner is basically already done or sad that everything is freezer burnt. Today’s story is a happy one. Rummaging through my freezer I found frozen loaves of bread dough, but they were stuck together (okay, and a little freezer burnt), so I couldn’t use each loaf to make actual bread. Instead, I thawed it out, cut off the freezer burnt pieces, and made this delicious breakfast treat. I promise I’m not a hoarder, but I still...
If I smell tacos, I want tacos. If you mention tacos, I want tacos. Tacos. Tacos. Tacos? The same thing goes for pizza. This is a terrible, terrible problem when you’re at work and people are always doing things like eating lunch. A week or two ago, the beautiful smells of tacos and pizza were co-mingling in the hallway, so I did what any other human would do and made taco pizza immediately upon my arrival home. Fun fact: this was the first taco pizza I’ve ever eaten. I’m fully aware that this has been a thing for a long time now, but there’s always meat on them and no beans, which would really just result in my eating a lettuce and tomato pizza. Not the same (but that actually...
