When we were on vacation, all I wanted the whole time was Mexican food. On the cruise ship I couldn’t really demand whatever kind of food I wanted, and I wasn’t about to search out a Mexican restaurant in Jamaica, but I had a little control in Florida. I asked everyone who looked like they lived there for a recommendation for a good Mexican restaurant, and you know what I got? NOTHING! Not sure if Floridians hate Mexican food, but not one person could even name one Mexican restaurant, unless you count Chipotle (and I most certainly do not!). Since getting home, I’ve made a lot of my version of Mexican food and apparently, I’m really into enchiladas lately. Homemade enchilada sauce is just too jammin` to leave it to...
Despite the fact that I haven’t finished raking the leaves in my yard, we have a solid layer of snow on top. The only thing that keeps me moving forward is that as the weather gets colder, the beverages get hotter. I’ve always been a sucker for hot chocolate, tea, coffee, anything warm and delightful, but it’s a real downer having to skip the marshmallows on top (except on the rare occasion I get my hands on vegetarian marshmallows). When I saw amazing looking chocolate chip marshmallows this season, I knew something had to be done to keep me from going crazy with envy. That’s where the idea for cookie croutons came in. Josh and I have been arguing over whose idea these were, that’s how good they are. Josh...
What do you look forward to when you get back from a vacation? Is flying home on your birthday only to discover that you have to throw away everything in your fridge and freezer? Because that’s what I got. There were some bad storms in Michigan while I was gone and the power was out for several days. Silver lining: I missed having to go 3 days without electricity! Other than that, I had a great time and I’ll probably post some pictures later. I’m not usually one to carry a camera with me, so we didn’t take too many. Mostly of some adorable animals we saw while in Florida pre- and post- cruise. I originally posted this cheesy rice and broccoli casserole on Hannah’s blog earlier this year. I put a placeholder on...
I couldn’t very well share a gingerbread spice mix and not show you a billion ways to use it, now could I? When I was drinking/spilling the gingerbread latte that inspired the mix recipe, I was also eating an incredibly disappointing scone. Scones are my jam, people, I can’t just ignore them when they sit looking all delicious in a glass case. But when disappointment scones strike, I (like any sane person in the world) feel compelled to make a million perfect scones for myself. Normal scone recipes use a lot of butter, but not mine! No butter here. Frankly, I’ve forgotten how to use butter. No joke, at this point when I try to make “traditional” cookies with butter from the simplest of recipes, I get a big mess. ...
This month’s Recipe Redux theme is “Adding Merriment to Mixes”. I’m not usually the kind of person that makes jars of mixes, so I had to think about this one for a LONG time. After guzzling tea after tea and latte after latte (my preferred thinking beverages), the idea of a gingerbread spice mix hit me right in the face (okay, more like the chin/neck region when the lid came off my gingerbread latte!!!). We are rapidly approaching the time when everyone wants everything to taste like the holiday season, and I’m here to provide that for you. When making gingerbread anything, I like to be a little heavy on the namesake, ginger. Lots of gingerbread cookies, cakes, and muffins call for way more cinnamon than ginger. No. No. No. Please...
Oh hi there! Guesssss where I am? I’m on a boat!! *cue music* Okay, actually, it’s a ship. And they get REALLY upset when you wear a shirt that says “I’m on a boat” according to 2010 Kelly. Maybe not upset, but I’m pretty sure every staff member I passed felt the need to touch my shoulder and tell me that it’s actually a ship. Anyway. That’s where I am, but don’t be jealous – you have this sweet enchilada recipe. So, I know you made the enchilada sauce recipe on Friday and have been anxiously waiting to use it. Here’s your chance! Fact: I cannot roll pretty enchiladas. See my BBQ enchiladas for proof. Also fact: I’m lazy. Very, very lazy. If you combine the two, you’ll see why...
