Finally finished my Halloween costume, wooo! Do you make a costume or buy one at the store? I used to buy one when I was younger (well, my parents bought them, obvi) but ever since I made one a few years ago (River Song!) I haven’t gone back. I don’t like make them, make them. But more like source the pieces I need and make the pieces I can’t find. It’s a lot of fun and makes Halloween start a little earlier! My breakfasts vary with the seasons. In the winter, I like to eat hot oatmeal. In the spring, a piece or two of fruit. Summer, definitely cold cereal or overnight oats. But fall? Fall is the season of the muffin. Or pancakes, if I have time for pancakes. But muffins are basically pancakes in cup formation and I can grab one as I run out the door. Anyone agree? Everyone? Good. Then it’s settled. Heeeeeey! Today’s post is a little different for me. I know. I know. I sound crazy? I sound crazy. This is actually something I’ve been making for years. Is that weird? It’s not weird. It’s delicious. It was actually inspired by flipping through a cookbook and seeing a picture of something and thinking it sloppy joe lasagna. When I got to the actual recipe, it was some sort of Mexican lasagna. With tortillas. How’d I even get the two mixed up? But the idea stuck in my head. And I couldn’t rattle it free. I love sloppy joes (true talk) and who doesn’t love lasagna? <– Crazies! That’s who. Like the total weirdo I am, I think I used to make this with Velveeta, because Josh loves the crap out of Velveeta. And American cheese… well, all cheese really....

Truth time: I love Manwich. Are you all full of judgment over that? You shouldn’t be, it’s delicious. Buuuuuut, let’s not talk about how the second ingredient is sugar. And the 4th. And the 6th. True, there is added sugar in my homemade version. True, there’s even two kinds of sugar. But they’re a bit more natural and better fit into the realm of things I like to eat. Not saying I don’t like eating sugar, I just normally prefer to keep sugar in cookies and not in my dinner. Plus, look at the ingredients list. There’s fresh veggies (not weirdo dehydrated ones — why dehydrate something before you add it to a sauce and can it?) and some spice. I start with tomato paste and tomato sauce as the base ingredients. If...
