Waffle Tacos

Has anyone tried the Waffle Tacos at Taco Bell? While I haven’t actually tried one, the idea is incredibly intriguing.  I’ve heard mixed reviews of the fast food breakfast– mostly that the waffle leads something to be desired.  So rather than trekking out to Taco Bell on a precious Saturday morning, I decided to make one at home.  In my pajamas.  As breakfasts were meant to be eaten.

Is it weird that I felt because I’m filling the waffle with eggs that the waffle itself had to be egg-free?  Moderation or something.  I could’ve gone with a tofu scramble instead of eggs and made this vegan, but I normally sleep in late on weekends and am fighting the hangry monster who really can’t be reasoned with.  Eggs are fast and tummies are hungry.  If you’re looking to make it vegan, try Hannah’s tofu breakfast scramble — if you leave out the veggies, you’ll have a great basic eggless, eggy base (though in hind sight, having spinach inside the eggs here would be delightful).

On a side note, my younger sister’s high school graduation party is this weekend.  And I feel so old.  For some reason, I’ve blocked out my actual high school graduation ceremony.  Excitement?  Nerves? (I was valedictorian and had to give a speech — nerd alert)  But I do remember my graduation party pretty vividly.  It doesn’t seem 8 years ago.  Hopefully the next 8 years slow down a little.  I don’t want to wake up next weekend and realize that I’m 33, ha.

Serves: 2 – 4
 

Ingredients
  • 4 eggs or tofu scramble (Such as this one, see note)
  • 1 recipe whole wheat waffles , prepared (4 waffles)
  • salt
  • pepper
  • hot sauce, optional
  • cheese (or vegan cheese, such as Daiya or a sprinkle of nutritional yeast)
  • Pure maple syrup
  • Optional: veggie bacon or sausage (you could use real bacon/sausage if that fits your interests)

Instructions
  1. Heat a skilled over medium, low heat.
  2. Crack the eggs in a bowl hisk the eggs until sufficiently scrambled. Season with salt and pepper to taste and a few splashed of hot sauce, if desired.
  3. Spritz the skillet with nonstick spray. Pour the eggs in and whisk. I recommend whisking throughout cooking to keep them light and fluffy in the tacos, but you can prepare the eggs anyway you prefer, as long as they are safely cooked through.
  4. Split the eggs across the 4 waffles, layering down the center of one of the waffle’s seems. Sprinkle with cheese, drizzle with syrup, and top with your breakfast meat substitute, if desired.
  5. Fold and eat like a taco.

Notes
If making the linked tofu scramble, leave out the veggies. That recipe already contains hot sauce, so you can skip in the recipe.
Prep time estimate includes time to cook the waffles, but you can cook those alongside the eggs. I’d cook 2 waffles before adding the eggs to the pan to time it just right.

    I have been totally intrigued by them too but haven’t eaten at a Taco Bell since my collage days. I can’t see that changing. Love that you made them on your own. This I would definitely try.

    Well now I feel old. Only 8 years ago?!? Mine was 17 (GULP!) years ago. And now I’m sad. I need a waffle taco to make myself feel better. Yes, yes, that will surely help!

    I actually just ate at Taco Bell for the very first time in my life a few weeks ago. My little one begged me to go on the last day of school. (why? I’m not sure!) But we went. I think I’m good. Don’t need to go back. I’m not too big on fast food anyhow … So I will gladly make a waffle taco at home! 🙂

    You’re speaking my language with these breakfast waffle tacos, Kelly! I haven’t tried the Taco Bell rendition because it seems like a bad idea… but making them at home? BRILLIANT. Definitely adding this to my list of things to try soon!

      I wish I could say you’ll never catch me in a taco bell, but 3 am post-bar-hunger is real and bad choices are easy :-p

      Mimosas are actually my preferred method of payment 😉 If I had practiced my speech, maybe I wouldn’t have been so nervous. I wrote it mayyyybe the day before (or the morning of — if we’re being honest).
