I just made these and they were amazing! I used whole wheat pastry flour, and skipped the butter/margarine. I used a Mickey Mouse pancake mold which helped them get super fluffy and tall. They are great topped with peanut butter and chocolate chips (to make a Mickey Mouse face!) with a cup of vanilla almond milk on the side. Thank you for the wonderful recipe!

Haha, I love that you sing about everything!! I wanna hear your cat feeding songs! That is such a great idea to use vanilla flavored almond milk, I bet it makes them taste so good!! I want these funfetti pancakes right now 🙂

Yum, yum, yum!!! I am a sucker for funfetti cupcakes, so obviously funfetti pancakes sound awesome. Major bonus that they are vegan! Also, I just have to say that I’m obsessed with the word “jimmies.” I always just called them sprinkles when I was growing up, so I’m kind of in love with that word haha!
