I’ve been in a dinner funk lately too! And I have lots of cauliflower on hand! We must be on the same wavelength. Taquitos stuffed with my favorite veggie and lots of cheese would make me extremely happy!

I hear ya on the dinner situation..I’ve been pretty burned out on cooking, myself. But I’m psyched you overcame the funk to bring me these freaking delicious tubes of cauliflower because I want to eat about 70,000 of them right now! And dip them in every sauce ever, because: taste test. Seriously delicious looking toquitos, my dear!

I definitely get into food funks like that…and yet I never think of taquitos! Come to think of it…I do have cauliflower AND tortillas in the fridge right now…

Awesome idea, Kelly! I’m obsessed with taquitos right now, and have been loving cauliflower in tacos. The idea to combine the two is genius! I’m actually making taquitos tonight for dinner and experimenting with a new combination. I hope it turns out as delicious as these sound, or I may be wishing that I had made these instead! 😉
