Remember the series of guest posts from last month? Where everyone independently declared my love for cheese? They’re definitely not wrong. Cheese and I are besties. I’ll snack on cheese any day just as-is (and full disclosure: I’ve also caught Josh eating a block like a candy bar), but sometimes you want a slightly fancier vehicle for you cheese. You know for parties, watching the game, or just trying to impress all of your friends with gooey, melty cheese.

I’ve noticed that most cheese dips are either A. meaty B. basically just cheese and salsa C. too fatty to stomach. Can we get a nicer, healthier cheese dip packed with vegetarian protein? And maybe some veggies? Plus creamy, dreamy is mandatory in any cheese dip I’m going to eat.

I used Cabot’s pepper jack cheese in this for the perfect amount of kick. I was pretty surprised to see that it’s naturally lactose free. But I re-lactosed it up with Greek yogurt and cream cheese, soooo there’s that. Black Bean and Pepper Jack Dip

Serves: 6 – 8 servings
 

Ingredients
  • 1 Red bell pepper, chopped
  • 1 Green bell pepper, chopped
  • ½ Red onion, chopped
  • 3 cloves garlic, minced
  • 1 can black beans, drained and rinsed, or 1½ c cooked black beans
  • 4 oz Cabot cream cheese or Neufchatel (for a lighter option)
  • ¼ c Cabot low fat plain Greek yogurt
  • 3 tbsp agave nectar or honey
  • 1 tbsp ketchup
  • 4 tbsp taco seasoning (or 1.25 oz packet)
  • 4 oz Cabot pepper jack cheese, shredded
  • 1 tsp lime juice

Instructions
  1. Turn your oven on to broil (500 degrees F).
  2. In a pan lightly spritzed with nonstick spray or lined with water, saute the peppers, onion, and garlic until almost soft.
  3. Meanwhile, lightly mash the beans so that only about ⅓ of them are still whole.
  4. Add the beans, cream cheese, and yogurt. Stirring and cooking until the cream cheese has melted, then add the agave and ketchup. Cook until the excess liquid is gone.
  5. Add the taco seasoning, half of the pepper jack cheese, and lime juice. Stir until well mixed.
  6. Spritz a medium-sized casserole dish (the equivalent of an 8×8 inch dish) with nonstick spray and pour the dip in. Cover in remaining cheese.
  7. Pop in the oven and bake until the cheese on top is melty, about 5 – 10 minutes.

    Cheese and I are besties too. That’s one reason I could never be a vegan!

    I’m surprised Cabot is lactose-free too but either way, I’m good. As long as I have a chip, that is. I would be dippin’ it all up in this! πŸ˜‰

    Cheese is my bestie too!! And I especially love Cabot cheese, it is pretty much the best cheese ever! I will devour everything and anything with black beans and cheese! This is mouthwatering πŸ™‚

    Is it odd that I’m envisioning myself bathed in this dip? I could seriously eat nothing but this for the rest of my life! I luuuurve Cabot cheese and have yet to try their pepper jack! Must get my hot little hands on a hunk of it and make this for game day πŸ™‚

    This is like, the classy version of what I do: One can chili, one block cream cheese, one package shredded cheese. It always goes over really well at parties!

    Great recipe and it’s actually not that hard to follow. Everything looks so yummy!!
