The sad thing is, I could totally see myself smuggling cornbread-stuffed peppers into a movie theater. I mean CORNBREAD. That is probably the best stuffing. Ever.

In reply to PassTheKnife. I've actually never had a firm polenta (only the creamy, almost hot cerealy kind), so I'm not sure! It was heavenly and moist though. Definitely a hearty and delicious meal, wrapped up in a tasty pepper. I'm jealous you have peppers right in your garden to use in them!

This looks fantastic, I love that it is stuffed with something hearty like cornbread– I bet it is a nice mix between cornbread and polenta when cooked. I have some peppers growing the the garden and this will be the perfect meal for them.

These stuffed peppers look phenomenal! I love the idea of stuffing cornbread in them…sound like the perfect mix of sweet, spicy and perfectly filling. So creative!
